Apple Saute with Ice Cream
(A fall dessert for you. Use my favorite Macintosh apples.
This recipe comes from Kroger grocery
stores)
Ingredients
3 tbsp. butter
4 large apples (cored,
peeled and sliced)
¼ cup brown sugar
1 tbsp. lemon juice
½ tsp. cinnamon
¼ tsp. nutmeg
½ cup dried cranberries
Vanilla ice cream
Directions
Preheat a skillet over
medium heat. Add butter to the skillet, and stir until melted.
Add apple slices and sauté
6 to 8 minutes.
Add brown sugar, lemon
juice, cinnamon, nutmeg and dried cranberries, and cook for 2 minutes more.
Scoop the ice cream into dessert bowls, and top with the warm apples.
Refrigerate any leftovers.
Chunky Grilled Guacamole
(A recipe from Ro-tel for your
tailgate party or football watching party)
Ingredients
PAM Grilling Spray4 large ripe avocados, cut in half, pit removed
1 can (10. oz. each) Ro*Tel Original Diced Tomatoes & Green Chilies, drained
5 green onions, chopped
¼ cup chopped fresh cilantro
½ tsp. garlic salt
¼ tsp. ground cumin
1 bag (10 oz. each) corn tortilla chips
Directions
Spray grate of outdoor
grill and utensils with PAM for Grilling Spray. Preheat grill to medium heat.
Grill avocados, cut side
down, 5 minutes or until browned. Cool: remove from skin and coarsely chop.
Combine chopped avocado
with tomatoes, green onion, cilantro, garlic salt and cumin in small bowl.
Refrigerate 1 hour
before service. Serve with tortilla chips, if desired.
